1 1/2 kilo lamb (not front leg)
2 water glass oil
salt and pepper
Execution:
Wash meat, cut into small pieces and let it dry in a bowl for 2-3 hours. Pour the oil into the pot and burn before putting the meat, stirring it often, very high heat until it turns white. Then, lightly salt and pepper, cover the pan, lower the heat to half and they leave to cook for 1 1/2 -2 1/2 hours.
Warning: do not place any water and serve the meat almost dry and not floating in oil.
